Last night we had the pleasure of dinning with a great Capetown chef at his home and sampled some Western Cape wine pairings.
We started our night with a bottle of Pongracz sparkling wine made in the French style of Champagne. I was shucking scallops drinking in the kitchen while a four pound pork shoulder was placed on the braai. We chopped cauliflower, cucumber, tomatoes, mint, cilantro and made a Lebanese style salad.
The meat was cooked perfectly with a crispy crackling. We popped open a bottle of 09 Idle Cellars Cabernet Sauvignon and a bottle of 2009 Idle Cellars Syrah. Everything was delicious and succulent. The pork shoulder was juicy and crispy all at the same time. There’s nothing a good layer of crackling fat on a good pork shoulder slice.
A Meringue was baked with freshly whipped cream and mango for desert. Good friends, great food and well paired wine makes for a fantastic gathering.
