There are only 15 cases left of the 2009 Idle Cellars Chardonnay. This was the first white wine we made at Idle Cellars, going big making around 200 cases. We fermented it in barrel using three different kinds of yeast to maximize flavor. It was aged in French oak for 10 months. We only did %17 new French oak, so this wine isn’t very oaky. It has aged spectacularly much to our surprise. We figured that it had a 3 year life expectancy but we were very wrong. We have come to realize that California Chardonnay can be good in the bottle aged, not as long as French wines but California wines don’t have the mineralty to help them with an extended life. We started selling it Spring of 2011. It’s been in many different restaurants all over California, and can still be found at Deetjens Big Sur Inn. This is going to be your last chance to pick some up, so please indulge in this great white wine. Cheers.
