Dave Burton and his Speedy Creek Vineyard in Knight’s Valley, overlook the valley of Napa, where the morning fog rests and late afternoon sun shines amongst the vines. He found the property and planted every vine over 25 years ago. The trust is there. The fruit was hand picked, hand sorted and cold soaked on Sept 19th, 2013. three days of cold soak, followed by inoculation. 2 weeks of slow fermentation, with 3 punch downs a day and a two-hour press cycle. Barreled down 2 days later into French Oak barrels, 30% new. A smooth ride that will balance out any heavy meal.
