Tasting Notes: 

Beautiful deep purple color. Flavors of black cherry, blackberry and ceder are prominent. There is mouth watering tart acidity that builds a sturdy structure. It is well balanced, bringing a steady stream of character throughout your pallet. It leaves you with a spicy finish.

Cork dork winemaking info: Harvested in late October on the 24th of 2008, the clusters of this fruit were ready to be picked. Hand sorted and de-stemmed the 2 and half tons of fruit was placed into fermentation bins and cold soaked for 2 days for flavor extraction. We pitched it with BDX yeast feeding with minimal nutrients as the levels of the fruit looked good off the vine. It went through a smooth fermentation lasting 6 days. We pressed it, blended it with the free run and let the lees settle for 2 days before barreling down. We used one new Marques barrel, 2, one year old Francois Frere's and one neutral barrel. The wine stayed in barrel for 22 months. We bottled it on August 27th 2010. Released at an underground restaurant on March 3rd this wine is sure to shine over the next 5 years.
