2007 Idle Cellars Syrah

Tasting Notes: 

Deep jammy flavors of blackberry and chocolate mix together in the mid palate. This wine gets its spirit from hot chocolate and jammed breakfast toast. The acid and round flavors of fruit balance well it all areas of the palate. Seemingly perfect for all occasions this wine is simply delicious.

Syrah

Cork Dork winemaking notes: Ladi's vineyard was harvested on October 15th, 2007. The 2 and ½ tons of fruit were hand sorted by 5 people, de-stemmed and placed into small fermentation bins. After the sorting we got a sugar reading of 25.5 brix. The grapes were cold soaked for 2 days to extract fruit flavors. Syrah yeast was pitched on the 17th. The fermentation lasted 8 days and went very smooth. DAP and superfood were added to keep the fermentation smooth and easy. We punched down the wine in the morning and pumped it over in the afternoon. Syrah has a tendency to get a little stinky during fermentation, so we pumped it over to blow off any potential stink that was there. The wine was pressed on the 25th and left in tank for 2 days to settle out. It was barreled down and placed into french oak barrels. We used 1 new french barrel, a Marques barrel. This gave is a 20% new oak ratio.

Once in barrel the wine was racked 3 times over the 20 months it spent in barrel. It was topped once a month. This is a 100% vineyard designate Syrah from the Ladi's vineyard. No other juice was added to the barrels when they were topped or fermented. We bottled the wine on the June 17th 2009. It sat in bottle for 3 months before we released it to avoid bottle shock.
